All tea comes from the Camellia Sinensis plant and differences between each
tea type come from variations in the processing of the tea leaves.
Tea gardens pluck or prune the Camellia Sinensis year round. If
allowed to grow wild it would reach a height of about thirty feet,
but tea bushes are kept at a height of about four feet.
White Tea is the least processed of any tea type and is generally
considered to be a specialized variety of green tea. White Tea was
first developed during the Dong dynasty (92-1279) in the Fujian
province of China and many tea purists insist that only origin and
best white tea comes from the Fujian. Because it was so rare, white
tea was generally reserved for royalty during the Dong dynasty.
Popular varieties include Bai Mu Dan (White Peony), Kung Mee, and
Shou-mee.
